Our Red Wines
The red wines of Domaine Seror have an elegant and restrained style that respects the grape varieties from which they are produced, and the unique terroir of the regions in the Golan Heights where the winery's vineyards are planted; around Avnei Eitan and Qanatir ('Rehavam's Arches' or 'Umm el-Kanatir').



Syrah Seror
A Mediterranean Syrah wine, peppery and floral with a medium body, solid and round tannins, and a long, spiced finish. The alcohol is moderate, the fruit flavors are fresh, and the tannin maintains a solid, muscular structure. Pairs well with rich dishes such as ribeye steak or rich veal osso buco, and even good chocolate desserts. Serving temperature: 18°C (64°F).
In the production process, the Syrah must remains on the skins for 10-14 days, fermenting at a temperature of 25-28°C. The wine ages in French barriques (one to four years old) for approximately 14 months.
Cabernet Sauvignon Seror
A powerful and elegant Cabernet Sauvignon wine that highlights the full potential of this classic grape variety in the unique terroir of the Golan Heights. This is an exceptionally juicy wine with a full body, rich and complex, featuring prominent aromas of black berries, dried plums, and subtle hints of blueberries and dried fruits. The wine structure is solid and impressive, with mature tannins that give it depth and remarkable aging potential.
The wine complements rich meat dishes such as aged steak, grilled lamb chops, or reduced beef stews. It also pairs wonderfully with aged hard cheeses, roasted portobello mushrooms, and dishes with complex sauces. Recommended serving temperature: 18°C (64°F).
After harvest, the grapes ferment on their skins for three to four weeks at a controlled temperature of 25-28°C (77-82°F), a process that allows excellent extraction of color, aromas, and tannins from the skins. Following fermentation, the wine ages in French barriques (one to four years old) for approximately 14 months, which gives it complexity, depth, and subtle hints of vanilla, spices, and roasted coffee.
Claude Seror Golan Hights Blend
A blend of Cabernet Sauvignon, Syrah, and Merlot: the powerful Cabernet is supported by crisp and sharp Merlot, and complemented by a touch of Syrah, which adds spice. This is a fruity and peppery wine with a full body, rich and complex.
The wine complements a variety of dishes, meat pies or hard cheeses, and even cold platters of meats and antipasti. Serving temperature: 18°C (64°F).
Each variety and each plot ferments separately. The Syrah remains on its skins for 10-14 days, the Merlot for about three weeks, and the Cabernet grapes for three to four weeks. L'Or Rouge Seror
The winery's premium red wine. A Cabernet-based blend with a strong influence of spicy and rich Syrah and a touch of sharp and peppery Merlot. An elegant, harmonious, complex, and rich wine that will be a perfect companion to grilled steak, lamb stew, or beef or veal tagine with warm spices. Serving temperature: 18°C (64°F).

Our White Wines
The white wines of Domaine Seror have an elegant and refreshing style with excellent compatibility with Israeli cuisine and our climate.
Some of the wines are produced in very limited quantities, according to the availability of grapes from the winery's vineyards around Avnei Eitan and Qanatir ('Rehavam's Arches' or 'Umm el-Kanatir').



Rosé Seror
A Mediterranean rosé produced from Grenache grapes, with a light pink color and clear appearance. The wine is aromatic and floral, with a delicate fruit presence on the palate and a crisp, pleasant acidity that balances the natural sweetness of the fruit. The wine structure is elegant and light, with a fresh and refreshing finish.
Perfect on its own as an aperitif, and also as an accompaniment to grilled fish, lemony veal Carpaccio, and goat cheeses. Recommended serving temperature: 8-10°C (46-50°F).
In the production process, the grapes are immediately cooled for 24 hours. The juice remains in contact with the skins for four hours before being separated and transferred to cold settling. The must ferments for about three weeks, after which the wine rests on the lees for an additional three weeks.
Chardonnay Seror
An elegant Chardonnay with excellent freshness and minerality. This wine presents wonderful aromas of subtle toasted wood, harmoniously blending with notes of fresh white fruits, ripe fruit, and delicate hints of vanilla. The balanced structure, refreshing acidity, and long, clean finish make it a classic Chardonnay with a distinctive Israeli character.
The wine pairs perfectly with rich fish dishes such as grilled salmon or halibut with butter and lemon, cream-based pastas, mushroom risotto, and grilled chicken with herbs. It also makes a wonderful accompaniment to cream cheeses like Brie and Camembert. Recommended serving temperature: 10-12°C (50-54°F).
In the production process, the grapes are harvested at optimal ripeness and separated from the skins without pressure or maceration. After cold stabilization, the juice undergoes fermentation and rests on the lees. The wine ages for six months in French oak barrels, which give it the subtle toasted wood aromas and contribute to its complexity and depth.
L'Or Blanc – Seror White
A rich blend of Viognier, Roussanne, and occasionally other varieties, creating together a rich and balanced wine with refreshing acidity and slight crispness – always tasty and approachable. The aromas combine fresh white fruits, flowers, and subtle hints of exotic spices, together creating a complex and interesting tasting experience.
The wine is perfect on its own as an aperitif, and also as an accompaniment to salmon with a creamy sauce, or chicken breast with dried fruits. Recommended serving temperature: 8-10°C (46-50°F).
In the production process, the grapes are harvested at optimal ripeness and separated from their skins without pressure or maceration. After cold stabilization, the juice undergoes fermentation and rests on the lees selectively, according to the variety. After several months, the different components are unified to create the finished wine.
Seror Orange – L'ange
The winery's unique orange wine, produced from Viognier grapes through a special maceration process – longer than regular white wines but relatively short compared to classic orange wines. The result is a complex wine with a stunning golden-orange color, completely dry, aromatic, and with rich flavors and aromas of ripe summer fruits and stone fruits.
The wine is distinctive in its aperitif character, but also an excellent accompaniment to a variety of dishes despite not being tannic or having the 'oxidized' character of traditional orange wines or white wines with extended skin contact. Recommended serving temperature: 10-12°C (50-54°F).
This wine is produced in very limited quantities and sold primarily at the Domaine Seror visitors center, making it a unique experience for visitors. The special maceration process allows for extracting rich flavors and aromas from the grape skins, while maintaining balance and harmony.
